3 Ingredient Pumpkin Muffins

  • 1 box spice cake mix (yellow cake mix is also good and you can readily find gluten free versions in this flavor
  • 1 - 15oz. can pure pumpkin
  • 2 eggs (no eggs or allergic, no problem…they turn out fine without them)

 Optional add-ins:

  • Additional pumpkin pie spice, nutmeg or clove…especially if not using a spice cake mix
  • Chocolate chips
  • Pecan pieces
  • Course sugar crystals
  • Top with cream cheese frosting

 Step 1: Mix all ingredients.

Step 2: Fill muffin cups 2/3 full of batter. Can also be baked in a loaf pan or cake pan…just adjust baking time accordingly.

Step 3: Bake at 350 for 20-25 minutes

Cauliflower Cheese Soup

  • 2 c. potato large dice
  • 2 c. cauliflower pieces
  • 1 c. carrot chopped
  • 3 cloves garlic chopped
  • 1 c. onion chopped
  • 1 ½ tsp. salt
  • 1 box (4 cups) veggie stock (chicken is ok too)
  • 1 ½ c. grated medium cheddar cheese
  • 3/4 c. whole or 2% milk
  • 1/4 tsp. dill weed
  • 1/4 tsp. dry mustard

Step 1: Add potato, cauliflower, carrot, garlic, onion, salt and vegetable stock to a large pot and bring to a simmer. Cook for approximately 20-30 minutes until all soft fork tender.

Step 2: Let cool slightly and then puree using a stick blender until smooth.

Step 3: Whisk in milk, cheese and spices

Heart shaped birdseed cake

Birdseed Cakes

Ingredients

3 /4 c all-purpose flour, /2 c water, 1 envelope unflavored Knox gelatin, 4 c birdseed, 1 nonstick cooking spray, cookie cutters, wax paper, drinking straws, ribbon or string

Instructions

  1. Combine flour, water and gelatin in a large mixing bowl.
  2. Add the birdseed to the mixture and stir until well coated.
  3. Coat inside of large cookie cutters with nonstick spray and place on waxed paper.
  4. Completely fill each of the cutters with the seed mixture: press it into all

     nooks and crannies.

  5. Cut straws for each cake, insert into each shape (not too close to the edge), leave in place to create hole to hang.
  6. Let set for two hours.
  7. Carefully push dried seed mixture out of cutters and onto wax paper; remove the straw pieces.
  8. Allow the shapes to dry overnight.
  9. Insert a piece of ribbon or string through the holes and tie off - hang from nearest tree.

Note: This is a great kid-friendly project and also makes wonderful gifts.
